Pumkin Custar cake

3 eggs beaten.
1 large can Pumpkin
1 can evaporated milk .
1 cup of sugar.
1  tsp cinnamon
1/2 tsp salt.
1/2 tsp ginger.
1/4 tsp nutmeg, if desired
1 cup margarine, melt.
1 cup chopped nuts
1 big pack of yellow cake mix.

                   In a large mixing bowl. Combine eggs, milk, pumpkin, sugar, cinnamon, salt, ginger and  nutmeg. Mix well. Pour mixture into buttered 9 x 13 inch pan, sprinkles a packet of dry yellow cake mix over the mixture. Drizzle melt margarine over top of cake mix, sprinkle with chopped nuts and bake 350 for approximately  1 hour.

Liquid Laundry Soap

I wanted to share since it is so super affordable! My mom and a couple sisters have been making their own laundry soap. I just made my first batch today. Get this, $2 for a 5 gallon bucket of laundry soap! SAVING GALORE! It is unscented but you could add fabric softener or dryer sheets if you want a smell. Think about trying it. If you don't like it you wasted $2 but if you like it the savings are big!
You can get everything at walmart or most anywhere in the laundry section.

1 cup Arm and Hammer WASHING soda
1 cup Borax
1 bar fels-naptha soap

Grate the soap and melt in boiling water. Add the washing soda, Borax and melted soap to a 5 gallon bucket. Continue adding boiling water till the bucket is full, stirring. Let it cool 1 day. It will be a gel when it cools.

Parmesan Crusted Chicken

Parmesan Crusted Chicken ( By MOM )

1/2 cup mayonnaise.
1/4 cup grated parmesan cheese (I just used the bottled kind)
4 boneless, skinless chicken breast halves - about 1-1/4 lbs
4 tsp Italian seasoned dry bread crumbs (we crushed some garlic croutons I had in the cupboard)
1. Preheat oven to 425 degrees.
2. Combine mayo with cheese. Arrange chicken on a baking sheet. Evenly top the chicken with the mayo mixture. Then sprinkle with bread crumbs.
3. Bake 20 minutes or until chicken is thoroughly cooked.

Cream Brulee by shannon

Cream Brulee Recipe

2 cups of heavy whipping cream

1/3 cup of white sugar

4 egg yolks

½ vanilla bean or 1 teaspoon of extract

Steps:
1. Spilt bean in half and remove grains with edge of knife into pan.
2. Add cream into hot pan with vanilla
3. Put a pot of water on the stove till it boils (in separate bowl)
4. While its cream is heating whisk eggs with sugar in other bowl
5. Add a little bit of hot cream at a time to the egg sugar mixture while stirring. (Do not stir too much)
6. Then strain the mixture.
7. Get large flat pan. Put a towel on the bottom and then pour boiling water into the pan creating a water bath.
8. Fill 4 ramekins with the cream brulee till its almost full.
9. Before last ramekin goes into the pan fill the pan with the water till its half way up the ramekin using a ladle.
10. Remove bubbles from the top.
11. Once its all-together place in the middle of the oven at 325 degrees for 35 minuets or till it has a slight jiggle.
12. After cooking remove from water bath and put into refrigerator for 3 to 4 hours
13. Lastly create a thin even layer of brown sugar on the top.
14. Clean the edge and then use a blowtorch to create a nice golden brown color on top, or put into the broiler and watch it bubble for a little bit. (You don’t want burnt spots)
15. Chill again for about 10-15 min.
16. ENJOY!

Chicken Veggi Enchiladas by shannon

Chicken Veggie Enchiladas
2 Large Red Bell Peppers
2 Large Zucchini squash
1 full package of frozen yellow corn
1 Large can of Las Palmas Red Enchilada Sauce (you can pick the heat rating)
3 Chicken Breasts (boneless and skinless)
2 cups or so of cheddar cheese
Steps:
1. Cook Chicken in oven, then let cool till its able to be cut or pulled apart.
2. Dice up the bell peppers into tiny cubes (no seeds)
3. Grate the zucchinis.
4. Mix Corn, Peppers, and Zucchinis all together in frying pan and cook for 15 min. (add a little water and let it steam off, to help the cooking) Stir enough so it doesn’t burn the bottom pieces)
5. Once done cooking drains excess water from veggies.
6. Add about 1/3 to half of the can of enchilada sauce. (make sure to shake well before opening)
7. Add the pieces of chicken to the mixture.
8. Next get flour or fried corn tortillas for the pan. For flour place about 2 or 3 spoon-full of mixture into them add some cheese and roll like a burrito. For corn place a full layer of tortillas on bottom spread and even layer of mixture on top and then add some cheese. Repeat both until pan is full.
9. Pour the sauce on top of the enchiladas, then more cheese on top of that.
10. Lastly cover in tin foil and cook for about 20-30 min (until cheese melts) then remove foil and leave in oven for 5 more min so the cheese gets a little bubbly.
11. And now ENJOY!

coconut curry


This was good and very easy to make! The kids loved how the veg. are blended so it was like there were no veg. in it!

2 chilies- we used mild chilies so it wouldn't be too hot for the kids
3 carrots
1 onion
fresh ginger- I used 1 1/2 tsp powder since that's what I had.
Blend in the blender till it looks like mush


Cook chicken or shrimp. Add the blended veg. to the chicken and cook another 5 minutes. Add 1 can lite coconut milk and 1 1/2 tsp curry powder and some salt.
Serve on rice.

Oven Carmel Corn

This recipe was from one of our friend made , it's was so good. and i wanted to share with everyone . Have fun.

  1. Preheat oven to 250 degree
  2. Airpop 16 to 18 cups of popcorn ( take out any unpoped kernals )
  3. Then put popcorn in a large pot

In a medium sized pot combine :

  1. 2 stick margerine
  2. 2 cups brown sugar
  3. 1/2 cup corn syrup
  4. 1/2 tsp salt

Boil 5 minutes then add

  1. 1/2 tsp baking soda
  2. 1 tsp vanilla , mix well then pour over the popcorn and stir well till popcorn is evenly coated

Bake 1 hour stir every 15 minutes

Cooking 101

I am poor, but that is no excuse not to learn how to cook. Here is an inventory of cooking ingredients I currently own. Please someone tell me what I can make with them (other than a tin foil dinner, I've been doing that)
  • salt and pepper

  • Pam cooking spray

  • bag of califlower

  • lean ground beef

  • carrots

  • pita bread (leftovers from an Institute thing)

  • bag of lentils

  • rice

  • eggs

  • milk

  • bread

  • 4 corn tortillas

  • 2 cans cream of mushroom soup

  • top ramen

  • can of milk

  • mustard

  • Miracle Whip

  • butter

  • applesauce

  • cranberry juice
    That's about it. Can I make something like mashed potatos, but with carrots? Carrots are a root thing like potatos, right?


    Anyway, I've been making tin foil dinners with the ground beef and carrots and stealing some of my roommate's onion salt. It hasn't been too bad, other than I've messed up de-frosting the meat sometimes so it turns out really tough (but still edible). One of my new year's resolutions was to spend more time learning to cook, but then I went to the store and realized how expensive spices are- I didn't even want to know how expensive all the OTHER little things were! Seems like all recipes call for "a little of this" or "a little of that", but when you have to buy "this" and "that", even a little bit of it ends up costing tons of money!! So, all you who are/ were poor married couples, please help out your single sister with some how-to's. Thanks!! Love you tons!
